describe in details history of displays in there? how long ?

Your question could mean two things, so I'll cover both: how the displays have changed over time, and how much time they span. I only focus on the Archaeological Museum, because the Zeugma Mosaic Museum has a separate history.

History of the displays

Gaziantep began setting up its museums in 1944, and the Archaeology Museum on İstasyon Caddesi opened in 1969. Sources disagree on details. One account says the building was substantially enlarged in 2005 to house the newly discovered Zeugma mosaics, so the early displays were dominated by those floors.

As the mosaics and other finds filled the exhibition space, the mosaics were moved to their own Zeugma Mosaic Museum in 2011, and a redesign of the archaeology museum was announced. The enlarged, modernized halls reopened to the public on 18 May 2017. The present displays are therefore less than a decade old, though the collections behind them go back to the mid-20th century.

How much time the displays span

The museum covers a very long span. The displays run from the Lower Paleolithic to the early 20th century, in chronological order, starting on the ground floor. The route goes roughly like this:
ktb

Natural history and Paleolithic: The exhibition begins with fossils and rocks from past geological periods, then the natural history of Gaziantep and a display on the Lower Paleolithic. The extinct Maraş elephant skeleton belongs here. The museum has the skeletal remains of this animal on display.

Neolithic: Stone sculptures from the Neolithic age.
ktb
Chalcolithic and Early Bronze Age: Finds from Şaraga, Sakçagözü, Gedikli, Tilmen, Zincirli and Sam.
ktb
Late Hittite period: Artifacts from this important period, in particular from the ancient city of Carchemish (Karkamış).
ktb
Roman to Ottoman: Coins and clay seal impressions from Zeugma, plus finds from the Islamic and Ottoman periods. The Zeugma seal impressions are notable: they are described as the world's largest collection of clay seal impressions from the ancient city.

Outdoor garden: Stone artifacts including pagan and Christian tombstones from Zeugma and Hittite statuary.

That means one building runs from several hundred thousand years ago to about a century ago. This matches your timeline, but the museum's display of the Paleolithic section should be treated as showing the region's oldest human traces, not an exact dated sequence of the Dülük finds.

How long a visit takes

I could not find an official figure. As my own rough estimate, most visitors spend about 1.5 to 2 hours in the Archaeology Museum, and more if you read the labels closely. Opening hours and gallery arrangements can change, so check the museum's official page before you go.

I can also turn this into Chinese, or into a one-page visitor route if you'd like.
